Craft Kafe started in 2015 when founder Teddy Skiaviotis made a gluten-free pizza for a regular customer and kept going from there — everything on the menu, including the oversized cinnamon rolls born from a failed sausage-roll dough, is gluten-free by default rather than a substitution. That's rare enough in St. Pete to build a decade-long following.
