Ybor City after dark is mostly loud, sticky, and built for crowds; The Copper Shaker is the room you duck into when you want a properly built drink and a conversation you can actually hear. The bartenders know their 200 whiskies and will steer you instead of upselling you, and the kitchen goes well past bar snacks into truffle fries, charcuterie, and chateaubriand. It's genuinely good for a date or a serious drink. If you're out for a rowdy bar crawl or cheap rounds, keep walking down the strip.

Tuesday or Wednesday around 6 pm, right at opening-into-evening, when the bartenders have time to actually walk you through the spirits selection before the weekend crowd spills over from the surrounding clubs.

Don't order off the list cold. Tell the bartender a spirit you like and a flavor you're chasing, and let them build something off the 700-label back bar. Their smoked signature pours are where they show off.
