Saigon Blonde
This is theme done with real commitment, not a couple of paper lanterns and a rum list. Owner Peri Bandazian layered woven bamboo walls, commissioned murals, hanging lanterns, and tiki totems across five separate spaces, so the move is to wander — front bar, downstairs lounge, plane-wing back room, upstairs VIP loft — rather than plant yourself in one seat. The cocktails lean colorful and accessible (think rambutan purée and drinks served in fresh coconuts), which means it's for people who want a whole sensory night out, not purists hunting the platonic Mai Tai. If loud immersive theater and a room that photographs well aren't your thing, you'll find it fussy — go somewhere quieter.
Thursday around 8pm: it's open until 3am so the bartenders have time to actually make your drink right, the five rooms aren't yet a weekend crush, and you can claim the upstairs loft before anyone else thinks to climb the stairs.
Everyone piles into the front bar. Skip it — find the narrow staircase up to the VIP loft with the muraled ceiling, or duck into the tiny back "military bar" made from a salvaged plane wing, which is where the room actually gets interesting.
