April and Lauren tested the concept for years — an early Lucky Cup pop-up in Safety Harbor starting in 2019 — before opening inside the Galaxy Hotel lobby in 2023. They built the menu around cold foams that are gluten- and dairy-free across the board, a rarity that draws customers who'd otherwise skip the espresso counter entirely.
