Shoulder seasons — fall and spring — hit the sweet spot for Central Florida weather without full theme-park pricing; summer is hot, humid and stormy. Avoid the mid-March Winter Park Sidewalk Art Festival and Rollins graduation weekends unless you want those events, as rates and availability tighten hard.
