Agave Bandido built a second act above its Mexican kitchen: through a hidden door upstairs you land in Maya, a tiki-toned speakeasy pouring premium bourbons and tequilas. Downstairs, the signature birria tacos come in consomme-brushed shells with cotija and radish, on a terrace over Kingfisher Lake.

The whole concept started as a college business plan the founder wrote at the University of Kentucky — where he played soccer — under a different name: "Gringo's."
